Description
A selection of chili peppers, limes and garlic on a market stall in Peru, where all are typical ingredients in the local cuisine. The long orange chilis are Capsicum baccatum, the species known as ajis in Spanish and often used in especially Peruvian and Bolivian cuisine. The smallers chili peppers are Capsicum pubescens. They are also called rocoto (from their Quechua name rukutu or ruqutu) or locoto (from their Aymara name luqutu) peppers. They grow in cooler climates and higher altitudes than other chili peppers, hence they are common in the valleys of the Andes.
